Best Ever Potato Salad

Ingredients

  • 1 kg New potatoes (I used Jersey Royal)
  • 200 g smoked bacon lardons
  • 4 large spring onions thinly sliced
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • salt and pepper to season

Instructions

  1. Place your potatoes in a pan of salted water and bring to the boil, turn down to a simmer and leave to cook until they are just tender. Drain the potatoes and leave them to cool completely.
  2. In a frying pan, fry your bacon until crispy and then also leave to cool.
  3. Once your potatoes are cold, peel away the skins and cut into cubes. Place them in a bowl with the mayonnaise, sour cream, bacon and spring onions. Fold everything together gently until well mixed and then season to taste. Serve and enjoy!
