I love one pot recipes! Less messing about and less pots mean a big thumbs up from me. And this One pot Chilli is so delicious, full of minced beef, tomatoes, peppers, spices and rice.
I make this so often for dinner as it is just so easy. I cook the rice in the chilli pot so there are no extra pans and it is so easy to serve. Just spoon it into a bowl add a dollop of sour cream and you’re done. It only takes 30-40 minutes to make from start to finish so it is brilliant for those nights that you can’t really be bothered.
This dish also has 5 kinds of vegetables in it so it’s super nutritious as well as filling and comforting.

I don’t like my food to be too spicy so I use mild chilli powder. If you prefer things a little hotter you can use hot chilli powder instead. I also use smoked paprika because I love that smoked smell and flavour! Traditionally you would use kidney beans in chilli but as Shaun doesn’t like them I use haricot beans instead which are the beans they use to make baked beans.
I always make this in my big stock pan which is great for this kind of dish as well as stews and soups.

One Pot Chilli
Ingredients
- 1 tbsp olive oil
- 500 g minced beef
- 1 green pepper chopped
- 1 yellow pepper chopped
- 2 onions chopped
- 1 large carrot grated
- 1 tsp ground cumin
- 2 tsp chilli powder hot or mild, your choice
- 2 tsp smoked paprika
- 2 cloves garlic chopped
- 400 g tinned tomatoes
- 600 ml beef stock
- 2 tbsp tomato puree
- 180 g easy cook long grain rice
- 400 g tin haricot or kidney beans rinsed
Instructions

Heat up your big stock pot and add the oil, add the minced beef and brown it all off.

When the minced beef is browned ad in the onions, peppers and carrot and cook until they start to soften.

Add the spices to the pan and cook for 1 minute then also add in the garlic and cook for another minute.

Pour in the tomatoes, stock and tomato puree, stir and bring to the boil. When the mixture is boiling, stir in the rice and reduce to a simmer. Leave to simmer with the lid on for 15 minutes.

Add the beans to the pan and heat for another 5 minutes, season to taste and serve. I love to add a spoon of sour cream to mine!

Followed your one pot chilli recipe but used turkey mince & chicken stock instead of beef! It was delicious! Love beans so added some extra cannelloni beans instead of rice! Will definitely keep as a go to Chilli recipe, will try with the beef next time.
