Not only do you get the recipe for these delicious Dark Chocolate Cookies today but I also made my very first recipe video for them too. Making videos of my recipes and projects is something that I’ve wanted to do for a while but struggled to find the time. With lockdown in place and not much else to do I thought now would be the perfect time to give it a go. So these cookies are soft, rich and chocolaty with dark chocolate chunks. They were also declared to be the best cookie I have ever made by Mason but to be fair he says that whenever I bake anything 😀 he is my best cheerleader!
I have been making a lot of cookies during lockdown because they are so quick to make. With only 15ish minutes making time and 15 minutes baking time you won’t have to wait too long to eat one of these.
I would like to try these Dark with White chocolate chunks too because I think the sweetness of white chocolate would work really well with the rich chocolate cookie. Dark Chocolate Cookies
Ingredients
- 115 g butter
- 100 g dark brown sugar
- 50 g caster sugar
- 1 egg
- 140 g plain flour
- 1/2 tsp bicarbonate of soda
- 1/4 tsp salt
- 50 g cocoa powder
- 100 g dark chocolate chopped
Instructions

preheat your oven to 180c/160c fan oven and line 2 baking sheets with parchment paper.

Add your butter, sugars and egg to the bowl of your mixer and mix until combined.

Sift in the flour, cocoa powder, bicarb and salt and mix into a dough.

Use a spoon to scoop out a small amount, roll into a ball and then press it slightly onto a baking sheet.

Repeat this 12 times until all the dough is used up. Put 6 cookies on each baking sheet.

Bake in the oven for 12-15 minutes. When they are ready leave them to cool for a couple of minutes then transfer to a cooling rack. Enjoy!
