Old Fashioned Bread and Butter Pudding

For this week I had an idea. To make one pudding two ways. Today I’m sharing a traditional Old Fashioned Bread and Butter Pudding and then on Friday I will share a more modern take on the traditional recipe.

For those of you who don’t know, bread and butter pudding is made up of layers of buttered bread with cinnamon and raisins. It’s then baked in a custard. It’s best made with day old, stale bread which is why the pudding was invented in the first place. As a way to use up old bread without wasting it.

In 13th century England, bread pudding was known as “poor man’s pudding,” as it was a popular dish with the lower classes. Today however the dish has had a bit of a revival and you can find it on the menu of many trendy establishments. People love retro!

Old Fashioned Bread and Butter Pudding

  • 8 slices bread
  • 25 g butter
  • 40 g raisins
  • 2 tsp cinnamon
  • 50 ml double cream
  • 350 ml milk
  • 2 eggs
  • 30 g sugar

  1. Butter all 8 slices of bread, then cut off the crusts and cut into triangles. Arrange half of the bread in a dish then sprinkle with half the cinnamon and half the raisins. Arrange the rest of the bread on top and then add the rest of the cinnamon and raisins.
  2. In a pan add the milk and cream and heat until very hot but don't let it boil. In a bowl mix together the eggs and 2 thirds of the sugar. Once the milk mixture is piping hot slowly, whilst whisking, add it to the egg mixture.
  3. Once your custard is ready, pour it over your bread, sprinkle the rest of the sugar on to the top and leave to soak for at least 30 mins. Then preheat your oven to 180c/160c fan oven and bake for 35 to 45 minutes until the top has browned and the custard has set.
  4. Serve warm with custard, cream or ice cream, Yummy!
