I love Potato Salad, I’ve had lots of different versions of it but I think this recipe is the Best Ever Potato Salad. Jersey Royal potatoes, spring onions and crispy, smoked bacon lardons all mixed up in a sour cream and mayonnaise dressing!!
As long as our Great British weather cooperates, I’m sure you will be attending and hosting a few barbecues this summer. This Best Ever Potato Salad is the perfect side dish for you to make. In fact you should probably just double the recipe, it’s that good.
Last week I shared my recipe for Homemade Mayonnaise and that is what I used in this recipe. If you want to make things easier by using mayo from a jar though, it will still taste amazing.
Now is the best time to make this dish as it tastes so much better using new potatoes when they are in season. I used Jersey Royal new potatoes which are perfect for this recipe. With the added flavour from the spring onions and the bacon you will never need another potato salad recipe.

Best Ever Potato Salad
Ingredients
- 1 kg New potatoes (I used Jersey Royal)
- 200 g smoked bacon lardons
- 4 large spring onions thinly sliced
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- salt and pepper to season
Instructions

Place your potatoes in a pan of salted water and bring to the boil, turn down to a simmer and leave to cook until they are just tender. Drain the potatoes and leave them to cool completely.

In a frying pan, fry your bacon until crispy and then also leave to cool.

Once your potatoes are cold, peel away the skins and cut into cubes. Place them in a bowl with the mayonnaise, sour cream, bacon and spring onions. Fold everything together gently until well mixed and then season to taste. Serve and enjoy!
